Abstrak

The meat grinder machine functions to mincemeat so that it can be easily mixed with other food ingredients. This study aims to design an electric motor–based meat grinder and to determine the performance of the designed machine. The research method includes literature study, observation, planning, design, and fabrication. The machine is designed using a single-phase electric motor with a power of 0.3 HP, a speed of 2900 rpm, a pulley ratio of 1:3, and a voltage of 220 volts as the power source. The transmission system used is a single transmission consisting of a pair of pulleys with diameters of 8 inches on the motor and 22 inches on the grinder shaft. The test results show that the machine operates at 1000 rpm without load and 995 rpm when grinding meat. The vibration values recorded were 0.25 cm/s on the motor and 0.33 cm/s on the frame, which, according to ISO 10816 standards, fall into Zone A—indicating a safe vibration level for operation. The machine can grind meat at an average rate of 0.033 kg/s or approximately 2 kg/min. The system uses a single transmission consisting of a pair of pulleys connected by a V-belt to transmit and reduce rotational speed. When the motor is turned on, its rotation is transmitted to pulley 1, then to pulley 2 via the V-belt, causing pulley 2 to rotate. The connected shaft, screw conveyor, and cutting blade rotate together because they are mounted on the same shaft.
